History and Origins
I used to boil tofu with the head of a roaster. It's the dish mentioned in the above-recorded "driven mountainboat" that can be said to have long since been known to the common people. The head of a man is called a half-help. There are various theories, such as that the head of the pig was once called a half-help for a drink of a monkey, which was sold for 50 dollars, or that a man named Half-supply was selling. For Osaka, when making a fire, you can use your stomach to open your stomach with your head open and then burn it up and then drop your head off. Though cut off, it must have been sold cheaply because of its taste. If you boil that half-help with tofu or lentils, then the deep, thick root of the moss will come out and it will be very delicious. I'll have fun with the little body I put into half-help. The half-supply tofu that kept the head of the pig alive as a dish can be seen in the spirit of the "Feeling Cook" of Osaka, which uses food without waste.
When It Is Eaten
We've been known as common family food. You can eat in restaurants throughout the city.
How It Is Eaten
Put the soup in the pot and put it on the baked tofu and seasoning. When it is boiling, I'll put half help in and then I'll put the leaves in. Materials vary in each household. Also, since it's difficult to get half-help these days, sometimes it's used in a cooking pot.
Recipe — Serves 4
Ingredients
- 1 blocks(360 g) grilled tofu
- 100 g 半助
- 30 g green onion
- 1 cups dashi stock
- 1.5 tbsp sugar
- 1.5 tbsp soy sauce
- 1 tbsp sake
Method
- The baked tofu is cut into a three-by-four-inch rectangle and the blue strip is cut into a three-centimeter slice.
- The soup is put into a pot of earth and cooked tofu and sugar, soy sauce and wine are poured into the fire. When it is boiling, I'll put half help in and then I'll put a blue line in at the end.
